The morning explores the city by motorbike, taking in a local market, Notre-Dame Cathedral, the Central Post Office and the War Remnants Museum. 08:30 to 09:00 · Quảng Triệu Hội Quán, a Cantonese merchant hall
Most tours open at the cathedral. We open four hundred metres from the river, because that is where the city did.
Merchants from Guangzhou and Zhaoqing raised this hall in 1887 on what was then the Chương Dương wharf. Their community had arrived generations earlier fleeing the Qing, and had already built Chợ Lớn, the Chinatown four kilometres west, into the great trading centre of the South. But they put this hall downtown, on the water, where the cargo came in.
It honours Thiên Hậu, the sea goddess who protects traders, which tells you who was paying. Incense coils hang from the beams and burn for twenty-four days without stopping. Write your name on a paper charm and the calligrapher will ink it before it goes up into the smoke.
At half past eight it is almost empty. A few locals lighting incense, Cantonese drifting from the caretakers, no tour groups at all.
Good to know · Shoulders and knees covered. Donations are voluntary, so carry a little small cash if you want the charm.
09:00 to 09:30 · The French quarter by motorbike
This stretch is best taken in motion, so we ride it. Ninety minutes of queueing becomes thirty minutes of seeing more.
The Saigon Opera House, built 1900, ornate to the point of showing off. The People's Committee building, 1898 to 1909, pale cream and unmistakably an argument about who was in charge. In front of it, the statue of Hồ Chí Minh looking down Nguyễn Huệ Walking Street, pedestrianised in 2015.
There is one spot where the colonial city hall sits behind him and the busiest square in modern Saigon opens in front. Your guide knows it. That single frame holds a century.

09:30 to 10:15 · Notre-Dame Cathedral and the Saigon Central Post Office
Notre-Dame Cathedral Basilica, built between 1863 and 1880, has been under restoration since 2017 and the interior remains closed. We look at it from the square. Anyone promising you the inside right now has not been in recently.
Directly opposite, the Saigon Central Post Office, finished in 1891 to a design by Alfred Foulhoux, built like a French railway station. You will read almost everywhere that Gustave Eiffel designed it. He did not.
It is still a working post office, which is the point. Buy a card, pick a commemorative stamp, write it at the wooden benches and send it home. It lands on your doormat about three weeks after you do.
10:30 to 11:45
After the French left, the country split, and Saigon became the capital of the South and a front line of the Cold War.
This is where the day changes register. The museum is photographs, objects and firsthand accounts, and what gets you is never the scale of it. It is one caption, on one image, somewhere on the second floor.
People come in talking and go quiet. Almost everyone does.
Good to know · The hardest hour of the day, and we would rather you knew in advance. Several galleries are explicit, particularly on civilian casualties and Agent Orange. Your guide sets the pace, and if you want to leave, you leave.
12:00 to 13:30 · HOME Saigon
The day softens here and moves from monuments to a table.
After 1975 the country rebuilt itself slowly, and ordinary cooking became a kind of quiet evidence: not much to work with, handled with care anyway. Lunch is a multi-course set menu inside a restored villa, arranged privately for our guests and not something you can order from their public menu. Each dish is introduced as it arrives.
The motorbikes go back here. From now on you are in a car with the air conditioning on, and by this point you will be glad.
Dietary requirements · Vegan, Indian, halal and other Vietnamese options available. Set menus need a day's notice, so tell us when you book rather than on the morning.
13:45 to 14:45 · A traditional hair wash
There is a hair wash salon on nearly every street in this city, and almost no tourist has ever been inside one.
They are not a luxury here. People use them the way you might use a coffee break, at a price that makes it unremarkable. Forty-five minutes, lemongrass and herbal oil, the traffic going nowhere outside the door.
Guests book this expecting filler. Most fall asleep, and a surprising number tell us afterwards it was the best hour of the day.
15:00 to 16:00 · A Saigon craft workshop, choose one
The Đổi Mới reforms of 1986 opened the country up, and the generation raised afterwards grew up with options their parents never had. That generation is the Saigon you rode through this morning. You spend an hour with one of them.

16:30 to 18:15 · Landmark 81 Skyview
Landmark 81 rises 461 metres, the tallest building in Vietnam, finished in 2018. Your ticket covers the Skyview observation deck, the VR experience and a photo, or instead a drink at Blank Lounge on the 75th and 76th floors, the highest sky lounge in the country.
From a trading port, to a colonial capital, to a city shaped by war, to this. Saigon has never settled on one identity. The distance between them is the whole point.
We leave at 18:15. The drive back is not the twenty minutes your map is promising you.
